Mary Sandra Riddinger Jordan Adcox, age 80, of Roanoke, Virginia, formerly of San Antonio, passed away in the early morning hours of Sunday, January 26, 2020 with her beloved son by her side. Mary was born on December 4, 1939 in Portsmouth, Ohio to the late Philip Henry and Bertha Mae Hansgen Riddinger.
Mary was a registered, licensed dietitian, majored in nutrition and received her Bachelor of Science degree at the University of Cincinnati, Cincinnati, Ohio, in 1963; and completed her U.S. Army Dietetic Internship at Brooke General Hospital, Ft. Sam Houston, Texas in 1963; and completed her Master of Education degree at Texas State University, San Marcos, Texas, in 1984. In 2011, she received an Honorary Doctorate of Christian Music degree from San Antonio Theological College. Her varied career activities included: research dietitian while serving the U.S. Army Institute of Surgical Research; dietetic department director of Santa Rosa Medical Center and San Antonio Community Hospital; program director/instructor of the Dietetic Assistant Program at San Antonio Community College; supervisor for San Antonio Independent School District Food Service Manager Training School and consultant for school food service. She retired in May 1996 from San Antonio Independent School District in school food service.
Mary Adcox was a member of Delta Zeta Sorority, the American Dietetic Association (now Academy of Nutrition & Dietetics), and Texas Retired Teachers’ Association. She served as President of San Antonio Dietetic Association, as President of San Antonio School Food Association, Alumni President of San Antonio Theological College, and Church Clerk of Eisenhauer Road Baptist Church (now known as Freedom Hill Baptist Church), among other offices and committee chairs. She served as organist/pianist for Calvary Temple Assembly of God, Shepherd of the Hills Church of God, and Eisenhauer Road Baptist Church. She is listed in Notable Women of Texas, Who’s Who of American Women, and Who’s Who in America.
Mary is survived by companion, Durvin Marion; one son, Michael P. Jordan; grandchildren, Josh and Cassandra Jordan; step-son, Henry L. Adcox III; step-daughters, Rebecca Jean Adcox Cann and Marilyn Jo Adcox Noble; step-grandchildren, Jennifer Adcox, Lesley Noble, and Lisa Noble Martin; step-daughter, Sandra Jordan Mahan; and by a host of other relatives and very special friends.
Mary was also preceded in death by two husbands, Steve Jordan, Jr. and Henry L. Adcox, Jr.
Funeral services for Mary Adcox will be held at 2:00 P.M., Saturday, February 1. 2020 at Chapel Hill Funeral Home in San Antonio with Pastor David Taylor officiating. A military graveside will follow at Chapel Hill Memorial Park. Visitation will be held from 6:00 – 8:00 P.M., Friday evening, at the funeral home.
